Tasty Tuesdays - Vegetables
This week, we are talking about Vegetables. Everyone’s favorite topic. Veggies are the bane to many Americans' nutrition. We all know we need them but it’s a food group where many struggle to eat the recommended amounts. However, there is a reason why vegetables get the nutritious reputation that they do. These foods can heal you from the inside out. Here are some veggies and facts on why they are so important -
Brain food: Brussels sprouts, peas, bell peppers, butternut squash, sweet corn. These foods nourish your nervous system and aid in focus and concentration. They carry vitamins like B6 & B1.
Hydration full: Spring onions, celery, cucumber, carrots, cabbage, eggplant. Foods that are water rich and also contain high levels of potassium.
Immunity strong: Broccoli, leeks, shallots, garlic, ginger, turnips, spinach. Powerhouse foods that contain compounds to fight in your cells against cancer.
Sustaining energy and curbing hunger pains: Parsnips, snow peas, sweet potatoes, cauliflower, corn, brussels sprouts. Fibrous foods that will not raise the glucose levels in your body but will keep you satiated over longer periods of time.
I know this won’t suddenly make you believe that vegetables will taste like donuts. However, if you struggle with veggies, here are a few tips to eating more of the vegetables that will enhance your body in a ton of ways.
Start by adding one thing. Pick one vegetable that you feel comfortable with. Corn, carrots, asparagus, peas. Whatever that looks like to you and give it more of a chance in your weekly meals.
Get colorful. Something so appealing about vegetables is how beautiful their colors can be. Give yourself a variety of colorful food like bell peppers, mushrooms, radishes, bok choy, and see how much they brighten up your plate.
Toss into your favorite recipes. Vegetables do not have to take over your plate but just as the color enhances the appeal, the flavor might surprise you as well. They are perfect to add to your stir frys, oven meals, and sauteed foods!
Our palates are accustomed to a certain way of eating. What’s amazing is you have the power to change and grow your current nutrition to include these foods and your body will show you just how much it will enjoy it. Don’t be afraid of small yet gradual change.
